Hey, I’m Noam Bilitzer, chef and owner of MeeshMeesh Mediterranean in Louisville, Kentucky.
My mom jokes when I learned to stand, I learned to cook. My earliest memories are of sitting around big, loud family meals; it taught me how to care for others through food and hospitality.
My freshman year of high school was my first chance to work in a professional kitchen. It was exhilarating to be apart of team; it gave me real purpose and fueled my creative passion. I’ve worked in kitchens ever since.
As a green cook fresh out of culinary school, I wanted to learn everything other than the food I grew up with. I loved butchery, charcuterie, and elevated dining; I was obsessed with learning and trying as much as I could. After years of work, I felt the pull to return to my own stories and share the food that shaped me. It really hit when visiting family and talking over the best shawarma sandwiches, fried eggplant, or simple farm-grown veggies my sister put together. Levantine cuisine is ancient and it deserves to be in the scene.

At MeeshMeesh, we focus on creating a Levantine feast where guests can break bread and enjoy delicious food in a refined but comfortable and inviting space. What we do at Meeshmeesh is by no means original; our flavors are pulled from some of the oldest known civilizations. In fact, we may be one of the least original restaurants in the history of the world. But that just shows that these flavors have stood the test of time, over thousands of years. They’re delicious and I’m thankful for the opportunity to share these flavors here in Louisville, Kentucky.
Outside of the restaurant, Chef Noam enjoys spending time with his dogs, Arlo and Izzy. He often hosts backyard barbecues for his buddies, and loves traveling with his partner Megan.
Around town, you might find Chef Noam on a hiking trail, giving out high fives at Louisville City FC and Racing Louisville FC matches, browsing the butcher shop at Red Hog, tucking into bar Vetti’s Cacio e Pepe, or crushing the Breakfast Sandwich at Gralehaus.
